green smoothies aren't as gross as they look
One of my favorite blog & Instagram friends posted about the "30 Day Green Smoothie Challenge." I was immediately intrigued and decided to read a little more on the Simple Green Smoothies webpage.
(I should mention that while I was reading, I was eating cinnamon & sugar tortilla chips from Target. They taste just like a churro and are AMAZING! but not clean, not in the least. so sad)
If you've read this blog for any time at all, you know that I have no self-control when it comes to good food. Which is why I loved the idea of a "30 Day Challenge." It's short-term; I don't have to do it forrreevvvverrrr. (go ahead, say it in the voice from The Sandlot) It's also relatively easy; I don't have to join a gym or totally alter my lifestyle for this change.
so I signed up!
My one hesitation is whether I can do it with our very tight food budget. I'm going to use my green smoothies as a lunch replacement; hopefully they will fill me up enough to carry me until dinner. or at least 3:00 when I join Luke for snacktime. :)
Whats the goal through all of this for me? It's not to lose weight, though that may be an added bonus. Instead, I'm hoping to incorporate more fruits & vegetables into my daily diet and to replace processed foods with healthier foods in their natural state.
After you sign up, you receive emails with smoothie recipes and updates related to the challenge. The first smoothie recipe is called the "Beginners Luck" green smoothie. It uses ingredients you can pick up at your local grocery store and, believe it or not, actually isn't bad!

(I made a single serving; however,
the original recipe makes two servings and uses double what's listed below)
1 cup tightly packed spinach
1 cup water
1/2 cup frozen mango
1/2 cup frozen pineapple
1 banana
(Sidenote: I'm not a mango person so I was hesitant to follow the recipe as written, but I decided to give it a try. I'm glad I did! The flavors of the banana and pineapple blend really well with the mango.)

Yummmm! I too need to focus on cleaner eating. I don't get nearly enough fruits and veggies in my belly. I don't know if I will be able to hit a 30 day challenge since I work a full time job, but I will certainly try. :) I guess I will have to make a Kroger run tonight. :)

Also - have you ever made kale chips? I LOVE them! I don't know if everything on them is considered "clean" (where do you find out those sorts of things?) but Trey and I like to make them as snacks!

This is great! Good for you! I actually bought a juicer off Craig's list several months ago and try to juice at least once/week. It is a great way to pack in some of those micro-nutrients from fruits and veggies in their raw form
We are smoothie obsessed! We make one every morning and pack them with spinach. Makes us feel better when we don't touch veggies all day. We've had fun playing around with different combos. Have fun!
