I accidentally posted two Make it Mondays last week, but quickly removed this one & saved it for today. I may have shared this before, but I'm too tired to search through the archives on my blog to double-check, so whatevs. This recipe is so easy and so good, it's worth sharing twice.
The pin linked me to a recipe from Our Best Bites. I've yet to make a recipe from this site that I didn't like! These Cranberry Cinnamon Chip Bars are amazing. They're like 7-layer bars; you just dump the ingredients into the pan and bake. It doesn't get any easier!
Ingredients
1/2 cup (1 stick) butter
1 1/2 cups graham cracker crumbs
1 14oz can sweetened condensed milk
1 1/4 cup shredded coconut
1 cup cinnamon chips
1 cup white chocolate chips
1/2 cup chopped pecans (I never use these, but only because they're expensive!)
1/2 cup dried cranberries
Directions
1. Preheat your oven to 350 degrees.
2. Put your stick of butter in a 13x9 glass pan.
3. Put the pan & butter into the microwave for two minutes, or until the stick is completely melted.
This will be the first layer of our bars.
(You may need to spread the butter with a spatula so it covers the whole pan.)
Since buying graham crackers is way cheaper than buying premade crumbs, I just crush my own.
One sleeve of graham crackers makes about 1 1/2 cups of crumbs.
Making your own graham cracker crumbs is also a great way to engage your busy toddler!
5. Next you'll pour your sweetened condensed milk evenly over your graham cracker layer.
6. Then comes an even layer of coconut.

You may need to add some extras if your little helper turns into a cinnamon chip thief!
8. And another layer, this time of white chocolate chips.
9. Then you'll add your layer of pecans (I don't use these) and finally, a layer of dried cranberries.
10. Press down on the whole pan lightly to mush all of the yummy layers together.
Bake your bars at 350 degrees for 25-30 minutes, or until it's bubbly and light brown on the edges. Remove to a wire rack to cool completely before cutting.
Enjoy with a big ol' glass of milk!
